Pizza Soup

1 1/4 cups fresh mushrooms, sliced
1 tsp. vegetable oil
1 (15 oz.) can pizza sauce
1 (15 oz.) can diced tomatoes
1/4 tsp. Italian seasoning
Shredded Mozzarella Cheese
1/2 cup onion, finely chopped
2 cups water
1 cup pepperoni, chopped
1/2 cup Italian sausage, browned and crumbled
1/4 cup parmesan cheese, grated

In a large saucepan, sauté mushrooms and onion in oil for 2 to 3 minutes, or until tender. 
Add water, pizza sauce, pepperoni, tomatoes, sausage, and Italian seasoning. 
Bring to boil over medium heat then reduce heat. 
Cover and simmer for 20 minutes, stirring occasionally. 
Before serving, stir in Parmesan cheese. 
Garnish with Mozzarella cheese. 


Yield: 4 servings.
