Mom's Creamed Spinach

1 1/2 lb. raw spinach - put in colander in 3 batches for 2 minutes each to wilt
2 medium onions, chopped
12 oz. bacon slices 
2 or 3 chopped hard boiled eggs

In large iron skillet fry bacon slices, remove bacon and cut into small pieces, reserving grease.

Sauté chopped onion in bacon grease til tender. With shaker, add flour to bacon grease and cook a few minutes. Add milk and keep stirring to make white sauce. Add more flour or milk as necessary to have enough sauce for spinach. When sauce is right, add salt and pepper to taste. Add cooked chopped bacon, chopped hard boiled eggs and wilted spinach. Simmer until heated through.

DO NOT BOIL

Serves 6.
