Dierberg's Chicken Salad

1 Deli rotisserie chicken (about 2 pounds)
3/4 cup coarsely chopped celery
3/4 cup halved red grapes
3/4 cup pecan pieces, toasted
3/4 cup mayonnaise
2 tablespoons milk
1 teaspoon dried parsley flakes
Salt and pepper to taste
Remove meat from chicken; shred into bite-sized pieces (about 3 cups). In large bowl, combine chicken, celery, grapes, and pecans. In small bowl, stir together remaining ingredients. Gently stir into chicken mixture until well combined. Chill before serving on bed of lettuce.

Variations (Omit grapes and pecans.)

• Add 1 can (8 ounces) pineapple tidbits, drained, and 3/4 cup almonds or macadamia nuts, toasted.

• Add 1 apple, cored and chopped, and 3/4 cup walnuts, toasted. Stir 1/2 teaspoon curry powder into mayonnaise mixture before adding to chicken.
