For the meatloaf:
1 lb. ground turkey
1 small onion, chopped
2 celery ribs, chopped
2 cloves garlic, minced
1 Tbls. butter
1/4 cup cream
1 egg
4 Tbls. ketchup or 4 Tbls. tomato paste with 1/4 tsp. somersweet
Salt and pepper to taste
1 Tsp. dried oregano
1 tsp. dried basil
For the tomato sauce:
2 Tbls. butter
1/2 lb. sliced mushrooms
1/2 cup white wine
1 cup chicken broth
1/2 cup cream
Salt and pepper to taste
Melt butter in a skillet over medium heat. Sauté onion, celery, and garlic in butter.
In a bowl, mix together ground turkey and sautéed vegetables. Add cream, egg, 2 Tbls. of the ketchup, salt, pepper, and herbs to turkey. Mix well.
Put mixture into a buttered loaf pan. Spread with remaining 2 Tbls. of ketchup. Bake at 350 Degrees for 1 hour.
To make the sauce, sauté mushrooms in 1 Tbls. butter until crispy, about 20 minutes. Add wine and simmer for 10 minutes. Add chicken broth and simmer for an additional 10 minutes. Add cream and butter and heat through.
Slice and serve with sauce spooned over top
