2 pounds frozen spinach, steamed and well-drained - squeeze it out
1 med. red onion, finely chopped
1 med. yellow onion, finely chopped
2 jalapeño peppers, finely chopped
1/2 red pepper, finely chopped
1 cup grated parmesan cheese
1 cup shredded jack cheese
1 pound crisp bacon, crumbled
2, 8 oz. packages cream cheese
1, 16 oz. container sour cream
1/2 stick butter
In a large saucepan, sauté peppers and onions until onion is transparent. Cut
the cream cheese into quarters and add, stir until melted down. Add sour cream
and mix well. Fold in spinach. Put mixture in a crock pot and add in other
cheeses and bacon. Heat on medium until all is blended together. Serve with
celery sticks or other raw vegetables you like.
