Green Beans and Caramelized Onions

1 lb. green beans, washed and trimmed
1 small onion, sliced very, very thing (about 1 1/2 cups)
3 Tbls. butter
1 Tbls. olive oil
4 oz. feta cheese, crumbled (keep chilled)
Optional: 1 Tbls. fresh dill, minced

Melt butter and oil in a medium sauté pan over medium heat. When butter foams add onions and green beans (because the onions are cut so think they will caramelize as the beans cook). Sauté about 15-17 minutes, stirring often. If necessary, cover pan for a few minutes to slightly steam the beans.

When beans are cooked and onions are a caramel brown transfer to a serving bowl and toss with feta and dill (if desired).

Serve immediately.
