2 slices ham
2 slices cheese
2 large eggs
1 medium onion, sliced
1 medium tomato, sliced
2 Tbls. olive oil
Heat 2 Tbls. oil in a skillet over medium heat. Sauté onion until golden brown, about 10-15 minutes. Remove onions from pan and set aside.
Sauté ham until lightly browned on both sides. Place a slice of cheese on a piece of ham and top with the other slice of ham. Heat until cheese is melted. Remove from heat and keep warm.
Lightly oil skilled and fry eggs.
Place ham and cheese on a plate and top with an egg. Cover eggs with onions. Garnish plate with tomato slices.
Serve hot.
