Chocolate "Nut" Muffins

3 eggs, separated and at room temperature
3 1/2 Tbls. sour cream
3/4 cup wheat germ
1/4 cup grape-nuts
1 1/2 tsp. baking powder
1 oz. unsweetened chocolate, grated
2 Tbls. somersweet

Preheat oven to 350 Degrees.

Beat egg yolks with sour cream, wheat germ, grape-nuts, baking powder, chocolate, and somersweet.

In another bowl, beat egg whites until stiff. Carefully fold whites into yolk mixture. 

Spoon into buttered muffin tins and bake about 15 minutes.
