3 whole boneless chicken breasts (grilled and shredded or cut into bite size
pieces), about 2 cups.
1 c. roasted red peppers
1/3 c. roasted garlic, peeled and chopped
1/3 c. mayonnaise
1 Tbsp. balsamic vinegar
2 Tbsp. fresh basil, chopped
2 Tbsp. cilantro, chopped (I always use a lot more of this!)
1/4 tsp. paprika
1/4 tsp. nutmeg
1/4 tsp. black pepper.
Combine the chicken and red peppers. Mix together the rest of the ingredients
and then mix with the chicken and red peppers. Serve on baby greens.
