1 1/2 cups parmesan cheese, grated
1 Tbls. Italian seasoning
1 Tbls. garlic powder
2 eggs
6 chicken breasts, boneless and skinless
1 (16 oz.) jar marinara sauce
3 Tbls. olive oil
2 cups mozzarella cheese, grated
1/4 cup fresh parsley, chopped
Combine parmesan cheese, Italian seasoning, and garlic powder in a small bowl.
Beat eggs in another small bowl. Dip each breast first in the beaten egg, then in the cheese mixture.
Heat olive oil over medium-high heat in a large skillet. Fry in oil until brown, about 5 minutes on each side. Turn heat to low and add marinara sauce. Cover each breast with the mozzarella cheese and parsley. Simmer for about 10 minutes.
Serve with green beans sautéed in olive oil and garlic or a mixed salad.
