Breakfast Casserole

6 oz. bacon or sausage, crumbled
4 oz. fresh mushrooms
1 cup each cheddar, mozzarella, feta
1 cup chopped peppers
8 eggs, beaten
1/4 cup heavy cream or milk
1/2 tsp. each salt and garlic salt
1/4 cup chopped onion
1 cup wilted and drained spinach
dash of pepper

Beat eggs with cream and set aside. Cook meat and crumble.  Sauté veggies until tender. Add meat, veggies, and seasonings to egg mixture. Spray 8 X 12 pan or dish with non-stick oil or coat with butter. Layer bottom of pan with half of the cheeses. Pour egg mixture on top of first layer of cheese. Layer remaining cheese over egg mixture. Bake at 350 degrees for 35-40 minutes until top is golden brown.
