Mini Mexican Frittatas

1 - 10 oz package frozen spinach, thawed and well drained
1 cup cottage cheese

1 cup shredded Mexican cheese blend
5 eggs (could try 6)
1/4 cup milk
1 tsp. ground cumin
1/4 teaspoon pepper
2 tablespoons cilantro or parsley

Mix together spinach, cottage cheese, shredded cheese.
In a different bowl mix all other ingredients. Then combine both bowls
and mix together.

Spoon mixture into 12 lightly greased muffin cups, bake uncovered in a
375 oven for 20-25 minutes or until the eggs are set. Let stand for 5
minutes.

Serve w/salsa and sour cream
