Baked Salmon with Lemon and Dill

4 salmon steaks
1 tablespoon vegetable oil
4 sprigs dill
1 lemon, sliced
salt and pepper, to taste

Preheat oven to 400 Degrees. Brush both sides of fish with oil. Season with salt and pepper. Place in baker. Top each fillet with a dill sprig and several slices of lemon. Cover. Bake 15 - 20 minutes until fish flakes with fork.  Serve with dill mayonnaise, recipe follows.

Dill Mayonnaise

1/2 cup mayonnaise
1 tablespoon chopped fresh parsley
1 tablespoon lemon juice
1 teaspoon fresh dill, chopped
1 teaspoon capers
1 teaspoon chopped sweet pickle
1/8 teaspoon ground red pepper

Combine all ingredients, stirring well; chill.
