1 qt. fresh strawberries, washed and stemmed
1 cup sugar-----a bit less if berries are very
sweet
3 TBLS. cornstarch
1 cup water
a few drops of red food coloring
1 cup whipping cream , whipped and sweetened, or
Cool Whip
Baked Pie Shell
Have baked pie shell ready. Cut up 1 cup of the
strawberries. Mix sugar and cornstarch in a 2-quart saucepan. Stir in the
water gradually until smooth. Add cut-up berries. Cook and stir over medium
heat until thick and clear. Stir in food coloring. Cool. Stir in remaining
berries, saving 1/4 cup for top of pie. Pour into shell. Chill until firm,
about 3 hours. Top with whipped cream and reserved berries.
