Filled Chocolate Cupcakes

Filling:

8 oz. cream cheese, let soften
1 unbeaten egg
1/3 cup sugar
1/8 tsp. salt
1 cup chocolate chips

Combine first four ingredients but don't overbeat. Fold in chocolate chips.

Sift:
2 1/4 cups flour
1 1/2 cups sugar
3/8 cup cocoa
1 1/2 tsp. baking soda
3/4 tsp. salt

Add:
1 1/2 cups water
1/2 cup oil
1 1/2 tsp. vanilla
1 1/3 Tbls. vinegar

This makes a very thin batter. Fill muffin cups 1/2 full and drop heaping teaspoon of cream cheese mixture in center. Sprinkle top with chopped nuts and sprinkle with sugar.

Bake in 350 Degree oven for 25 minutes.

Must use cupcake liners.
