1 slice turkey bacon, chopped
2 Tbls. chopped green pepper
1/8 tsp. salt
1/8 tsp. ground cumin
1/8 tsp. crushed red pepper
1/4 cup egg beaters
2 Tbls. seeded and chopped tomato
Few dashes bottled hot pepper sauce
1 warmed 8-inch fat-free flour tortilla
Cook turkey bacon in a medium nonstick skillet on medium heat till crisp. Add
sweet pepper, salt, cumin, and red
pepper; cook for 3 minutes. Add egg beaters; cook and stir for 2 minutes. Stir
in tomato and, if desired, hot
pepper sauce. Spoon mixture into warmed tortilla; roll tortilla aroudn filling.
Makes 1 wrap.
