Banana Crumb Muffins

 

1 ½ cups all-purpose flour

1 tsp. baking soda

1 tsp. baking powder

½ tsp. salt

3 large ripe bananas, mashed

¾ cup sugar

1 egg, lightly beaten

1 tsp. vanilla

½ bag chocolate chips (optional)

½ cup butter or margarine, melted

 

TOPPING:

1/3 cup packed brown sugar

1 Tbls. All-purpose flour

1/8 tsp. ground cinnamon

1 Tbls  cold butter

1/3 cup walnuts (optional)

 

 

In a large bowl, combine dry ingredients.  Combine bananas, sugar, egg, vanilla and butter; mix well.  Stir into dry ingredients just until moistened.   Fill greased or paper-lined muffin cups ¾ full.  Combine the first three topping ingredients; cut in butter until crumbly.  Sprinkle over muffins.  Bake at 375 Degrees for 18-20 minutes or until muffins test done.  Cool in pan 10 minutes before removing to wire rack.
