1/2 cup olive oil
1 - 16 oz. can garbanzo beans (chick peas), drained
3 to 5 garlic cloves, coarsely chopped
1 tablespoon lemon juice
1 teaspoon salt
1 teaspoon pepper
1/2 teaspoon chili powder
1/4 cup fresh parsley for garnish, coarsely chopped
In a blender jar, place the 1/2 cup olive oil, garbanzo beans, garlic, lemon juice, salt, pepper, and chili powder, in that
order. (It will blend better) Puree, mixing frequently, until it becomes a paste. Spread on
melba toast snack crackers or pita bread.
