Black Bean Dip

2 - 14 oz. cans black beans, drained & divided
8 ounce salsa
1 teaspoon vegetable oil, does not have to be used
1 onion, finely chopped
1 red bell pepper, finely chopped
6 cloves garlic, minced
1 tablespoon cilantro
2 teaspoons cumin
3/4 teaspoon salt
1/2 cup cheddar cheese

In blender, mix 1 can beans and 1/4 cup salsa until smooth.  Sauté onion, pepper and garlic until tender. Add bean mixture, cilantro, cumin, salt and rest of beans & salsa. Mix well.  Bring to boil reduce heat to low and simmer for 5 minutes. Put in shallow dish and sprinkle with cheese. Serve with tortilla chips.
