Jalapeno Pepper Jelly

 

3/4 cup green peppers, cut up

1/4 cup jalapena peppers, cut up WEARING RUBBER GLOVES!!!

1 cup vinegar

5 cups sugar

1 bottle (6 oz.) liquid pectin

Green food coloring--try 8 drops--may be enough  

I wear rubber gloves when working with peppers and take care to not touch my face

Grind peppers finely; combine with vinegar in blender.  Blend 1 minute. 

Combine pepper mixture with sugar in large saucepan.  Bring to boil; cook over low heat, stirring constantly for 4 minutes. 

Remove from heat; skim off foam.  Cool 1 minute. 

Stir in pectin and food coloring; pour into hot sterilized jars.  Seal. 

Serve with cream cheese and crackers, cold meats or egg rolls.  I like it the best with Ritz crackers.  

Makes 5 half-pint jars.
